Tasty local food: Fromagerie du Troufleur
Near Le Perron, in the High Fens, a beautiful herd of Montbéliarde cows enjoys grass, herbs and spring water. So no genetically modified feed and no stress. The meadows surround the barn and the cows come and go as they please. Their particularly tasty milk ensures a high-quality end product.
Françoise Ledur's team transforms the fresh raw milk into delicious farmhouse cheeses. The artisan cheese factory bears the name of their most famous creation: le Troufleur (the Peatcatcher). It is a smooth cheese weighing 1,200 grams that is shaped in traditional peat basins more than sixty years old. Françoise took these - together with the cheese recipe - over from the previous cheese maker.
Le Troufleur is aged for two months. The sandy red crust is washed down with brown beer from the Bellevaux craft brewery.
The result is soft with a spicy aftertaste, delicious with a glass of dark barley or a red wine. Fancy an extensive cheese table? Then also try Le Flocon des Fagnes - voted the best Walloon farm cheese with raw milk in 2019 - Le Petit Fagnard, Fenouil des Hautes-Fagnes or the other wonderful products from this passionate farm.
